Quick and Easy Chocolate Chip Cookies
This simple recipe is perfect for a quick sweet treat at home or in your caravan or motorhome, and with our time-saving hack you could have freshly baked cookies in under 15 minutes!
Ingredients:
125g Butter
115g Light Brown Sugar
110g Caster Sugar
1 Medium Egg
1 tsp Vanilla Extract
220g Self Raising Flour (or 220g plain flour + 1 tsp baking powder)
150g Milk Chocolate Chunks
Method:
Preheat the oven to 200ºc (180ºc fan oven, or gas mark 4) and line 2 trays with baking parchment paper or non-stick foil (if you’re making all 24 now).
In a bowl, mix together the butter and both sugars until the mixture is a smooth and creamy paste.
Add the egg and vanilla extract into the buttery mixture and stir thoroughly.
Sift in the flour (and baking powder if using) and mix in until the mixture is fully combined. It should all be one smooth, pale sandy colour.
Stir in the chocolate chunks. (I often don’t have these laying around at home, so I just roughly chop up a bar of chocolate and it does the job- It’s often cheaper than ready made chocolate chunks too!).
If you have time, chill the dough in the fridge for half an hour to deepen the flavour of the brown sugar. But if not, place heaped teaspoons of the dough straight onto the lined baking trays, making sure there’s ample space between them as they will spread out in the oven (I usually fit 6 on a standard-sized baking tray).
Bake in the oven for 7 minutes if, like us, you like them soft and chewy in the middle, or 10 minutes for a crunch.
